Quick Lasagna for Two

Perfect for a night where you need a quick dinner and you don't want a ton of leftovers.

Lasagna for Two (adapted from kraftrecipes.com)
 
Makes 4 servings

1 cup Ricotta Cheese
1   egg, beaten
1 clove minced garlic
1/2 cup chopped onion 
1/2 lb lean ground beef 
1/4 cup Grated Parmesan Cheese
2 Tbsp.  chopped fresh parsley
1 tbsp oregano 
6 lasagna noodles, cooked
1 jar  (14 oz.) garlic spaghetti sauce
1 cup Shredded Mozzarella Cheese
Olive oil
 
Preheat oven to 350°F.

Mix ricotta, egg, Parmesan, oregano and parsley.
Brown beef in pan over medium high heat. Add onions and cook until onions are tender. Drain, then add minced garlic for 15 seconds. 
 
Place 2 noodles in bottom of 9x5-inch loaf pan sprayed with cooking spray, trimming noodles as necessary to fit; reserve trimmings. Cover noodles with layers of 1/4 each of the spaghetti sauce, beef and onions, ricotta mixture and mozzarella. Repeat all layers twice. Top with layers of the reserved noodle trimmings, remaining sauce, ricotta mixture and mozzarella. 

Bake 30 min. or until heated through. Let stand 5 min. before cutting to serve.
 
*Tip - to make this dinner even quicker, buy oven-ready lasagna noodles.*

Thanks for posting this recipe! I honestly can not cook so I feel like even this is too complicated for me! I may give it a try though because it seems amazing! Im gonna be keeping my eye out for more!
