I ran across an interesting recipe in my February issue of Good Housekeeping, and when I thought we needed a break from the regular snack rotation, I gave it a try. It was really easy and the kids devoured it - I actually had to cut up another avocado because they both wanted seconds!
The magazine recipe suggested adding an over-easy egg to the top of this to make it a breakfast, but we left off the egg and added tomatoes instead to keep it light.
1/2 Hass avocado
1/2 tsp freshly squeezed lemon juice
Dash of salt
Sliced cherry tomatoes
Mash avocado, lemon juice, and salt together and spread on whole-grain toast. Top with cherry tomatoes.
